Kremser mustard – the renaissance of a classic
Mustard, a popular condiment, has been produced since the Middle Ages as a by-product of the important local wine production in the twin towns of Krems-Stein. Emperor Maximilian is said to have praised him during his visit in 1514. In the 17th and 18th centuries, the „Kremser mustard“ made a name for itself and is a valued commercial product in the city on the Danube.
In the first half of the 19th century, mustard from Krems also gained importance outside of Vienna and became an internationally recognized specialty, as shown by awards at exhibitions in London and Paris. In Krems companies like Zeno Gögl and J. Hietzgern, who produced mustard on a large scale, the first steam engines were used as early as the second half of the 19th century. Step by step, the handcrafted product becomes an industrially packaged food.
In the course of the 20th century, mustard production in Krems was finally discontinued, but the product name lived in the form of a mildly sweet product that in Austria served as a counterpoint to the "spicy" tarragon mustard, which was also produced in Krems for a long time, as popular mustard in tubes and jars.
Moser Kremser Mustard
The Moser manufactory from Krems has set itself the task of creating a Kremser mustard that comes as close as possible to the original taste. As usual 200 years ago and before that, grape must from a Krems winery serves as the basis. According to an old recipe, the cider is thickened and processed by hand with carefully selected types of mustard - without the use of vinegar - into Kremser mustard and only filled into glasses after the appropriate maturing time.
The resulting Moser Kremser mustard offers the consumer a taste that offers the opportunity to experience the Kremser mustard in a completely new way. Anyone expecting a certain sweetness will not be disappointed, but Moser Kremser Mustard also has spiciness that is reminiscent of horseradish and ginger, but has its origin in the mustard seed varieties used.
The Moser Kremser mustard is thus an extremely versatile seasoning that covers a wide spectrum from classic sausages to pickled salmon. And it was already in the olden days its unbelievable variety of flavors that gave the mustard from the wine town of Krems the reputation among gourmets of being the best in its field. And we would like to build on this again with the unique Moser Kremser mustard.
